Several years ago, my Celiac cousin opened my eyes to the difficulty she and others have finding nutritious baked treats in the marketplace. She lamented so many available gluten-free baked products are just junk food.
That visit inspired me to experiment in the kitchen and create flavorful, nutritious, allergy-friendly energy cookies that meet the requirements of not only gluten-free folks, but also those seeking clean-label foods and vegan alternatives, avoiding GMOs, and avoiding other common allergens.
The recipe-development process began with a search for natural, sustainably produced ingredients that are packed with nutritional value and free from allergen cross-contamination. Then came the recipe tests. I started to bake test cookies - hundreds of them. Believe it or not this is hard work! Even the “failures” tasted good, and I didn’t want any to go to waste.
As an iterative part of the testing process, I also calculated Nutrition Facts to ensure the cookies contain the highest possible nutritional values.
Above all, the cookies needed to taste wonderful.
